Sticky Toffee Pudding

 

Its much less sugary and sweet than you might think, the real sweetness is from the warm toffee sauce that you pour over the top just before you present it to your family or guests.

The cake isn't heavy at all, the dates give it that fruity flavor and I like it with either Bird's Custard or Ambrosia custard (my personal favorite) and it doesn't hurt with a 'girt big dollop' of clotted cream as well.

 

 


Serves 6-8

3/4 cup Sugar
3 Eggs
1 cup chopped Dates
1 1/4 cup Water
1 1/2 cups all-purpose Flour, sifted
1/2 tsp Baking Powder
1 1/2 sticks Butter
2 tsp pure Vanilla extract
1 tsp Baking Soda
2 tsp strongly brewed Expresso Coffee



Toffee Sauce

1/4 cup Lyle's Golden Syrup
1 cup Dark Brown Sugar
2 cups Heavy Cream

Preheat the oven to 350 deg F
Simmer the dates in the water for 10 mins, or until the dates are tender.
Add the Vanilla, Expresso and then the Baking Soda, let cool.
Cream the Butter and Sugar until light & fluffy, then add the Eggs, one at a time, stirring in between each egg.
Sift in the Flour and Baking Powder add the cold Date mixture and mix well.
Turn the batter into a 10" buttered Bundt pan and bake for 35-40 minutes, or until a knife inserted comes out clean.
Invert onto a serving plate.
Another idea is to bake in a muffin/cupcake pan and make a stack of the cooked 'buns' - pyramid style, and pour the sauce over and serve.

To make the sauce

Combine all the ingredients in a pan and boil gently for 10 minutes.
Spoon over pudding just before serving.
